A Dedicated MD Who Helped me Change my Way of Eating

Dr. Okimura has an MD and a high level of knowledge as a general practitioner. However, she also has an advanced degree in Nutrition, and this combination of medical and nutritional knowledge and experience has changed the way I eat. I had high blood pressure, high cholesterol, and high levels of sugar in my blood. As a result I also had plague buildup in four of my arteries. My answer to improving my health and condition was to exercise more and more and yet more. As long as I exercised, I thought, I would be fine. But, I wasn't fine. I continued to eat lots of meat, too few vegetables and fruits, way too many helpings of ice cream and other dairy products, fresh baked goods, and far too many highly processed foods with added sugar and fats. Enter Dr. Okimura. She convinced me, over time, to gradually change my diet. That took patience and consistency, as well as reading Dr. Okimura's recommended books (for example, How Not to Die: Discover the Foods Scientifically Proven to Prevent and Reverse Disease by Dr. Michael Greger) ad watching documentories (such as What the Health) and I started listening to Dr. Okimura with great interest. I gave up saying, "But, life is short! Enjoy the things you love!" and changed my thinking to "Wow I feel so much better when I don't eat a plate of bacon, a pint of ice cream, and half a pie." Now I eat lots of vegetables, a variety of fruits, plant based protein shakes with almond milk, and other non-processed foods that have no or little added sugar, and I have discovered foods I have never eaten before that are tasty and good for my health. My LDL is now 47, my HDL 57 and triglycerides 62. I also went from pre-diabetic to normal. Also, the plague in my carotid arteries is dissipating, according to a scan I had last year. I also lost weight. As I still exercise a lot, my heart fitness (nuclear treadmill test) is that of a 47 year old (I'm 73), and I give some the credit to my diet. I love my new life style, especially the addition of being kind to my body by eating right. Thank you, Dr. Okimura for your patience, knowledge, and kindness! Hmmm...Time for a healthy plant based protein shake! 😊
